Peel the head of garlic and stuff the turkey with garlic cloves. To do this, pierce the turkey meat deeper with a knife and push halved garlic cloves into the cut.

We go around in a circle to more or less evenly stuff the turkey with garlic.

Now let's prepare the marinade with which we will rub the turkey.

Pour olive oil into a deep bowl. Add salt and ground black pepper to the oil. It's hard to say the quantity, rely on the size of the turkey.

Crush a couple of cloves of garlic into a bowl with a garlic press, add cilantro seeds and a little rosemary. It is advisable not to overdo it with rosemary, otherwise the turkey chicken will taste like Christmas trees.

Rub the turkey inside and out with this mixture. We put the bird in a bag and put it in the refrigerator overnight, let it soak.

Place enough foil on a baking sheet so that you can wrap the turkey. Place the bird on top, breast side down.

It should be fried like this, breast side down. At the same time, the breast will absorb the juice that is released and will turn out very tasty and juicy.

Wrap the turkey in foil to create a neat cocoon and place it in an oven preheated to 220 degrees.

For a bird weighing 4.5 kilograms, the algorithm is as follows:

  • fry for half an hour at 220 degrees
  • reduce to 180 degrees and fry for another three hours
  • then uncover the turkey, that is, unfold the foil, raise the temperature to 220 degrees and fry for another 30 minutes, making sure it doesn’t burn.

That is, after about 4 hours we take the turkey out of the oven.

According to tradition, a whole bird is prepared for the New Year's table. Ideally, the carcass should be simply chilled, not frozen. If you can’t find one, defrost the turkey without haste: in the refrigerator or at room temperature.

Marinating and stuffing

Here are some marinade options.

  • Crush a few cloves of garlic into olive oil, add salt and a pinch of Provençal herbs. Let the marinade sit for a quarter of an hour, then spread it over the bird inside and out.
  • The second option is quick, the meat is marinated for a couple of hours in a mixture of lemon juice, salt, pepper, soy sauce and chopped garlic. When using this marinade, you are guaranteed a juicy turkey.
  • An equally interesting marinade can be obtained by mixing a glass of natural grape juice, a glass of chilled water, ¼ tsp. citric acid, 1 tsp. salt and sugar, 7 peppercorns.

Important point!

Since the carcass is large, it will not be salted evenly, so you need to chop it with brine. This can be done using a disposable syringe. You need to take a strong saline solution and make several injections into the chest and legs.

Stuffing a turkey is an art. You should not use porridge for this due to the large size of the bird. Stuffing is essential for retaining moisture so the turkey stays juicy as it cooks.

Prepare the fillet, cut into large cubes. Separately combine mayonnaise, salt and spices and mix. Cut the champignons into slices, mix with meat pieces, pour in mayonnaise sauce and mix everything.

Place the mushroom and meat mixture into separate portioned baking dishes. Bake at 220 degrees for 20-30 minutes. 5-7 minutes before the end of baking time, grate with cheese.

With vegetables

Products are designed for 1 serving:

  • half a turkey breast;
  • sweet pepper - 1;
  • potatoes - 2 tubers;
  • onion - ½ small head;
  • clove of garlic;
  • oyster mushrooms - 100 gr;
  • salt, pepper, turmeric.

Mix the spices immediately in a separate container. Rinse the breast, pat dry with paper towels, rub with spices and leave aside for a while.

Wash all vegetables, peel or seed if necessary, cut into small cubes, and finely chop the garlic and onion.

Fold a sheet of foil in half, layer potatoes, mushrooms, onions, peppers, breast, and garlic. Close the foil, as is usually done with julienne. Bake in a hot oven for 30-40 minutes at a temperature of 190-200 degrees.

French-style meat with turkey

A complete turkey dish with side dishes can be prepared according to the following recipe:

  • turkey fillet - 500 gr;
  • onion - 3 units;
  • potatoes - 500 gr;
  • champignons - 300 gr;
  • tomatoes - 3 medium;
  • hard cheese - 200 gr;
  • spices - to taste;
  • mayonnaise and sour cream - 150 ml each.

Let's prepare all the necessary ingredients:

  1. We clean and rinse the vegetables.
  2. We also rinse the fillet and cut it across the grain into pieces 1 cm thick. We beat them through the bag on both sides, rub them with spices and salt.
  3. Place the fillet pieces in the first layer in a greased pan.
  4. Cut the onion (2 pieces) into thin slices and place on top of the turkey.
  5. Prepare the sauce: mix mayonnaise, sour cream, a little ground pepper and a couple of glasses of water. Cover the meat and onions with the resulting sauce. Do not use all the sauce - it is needed to lubricate the other layers.
  6. Cut the potatoes into slices 2 mm thick. It’s better not to cut it thicker - it may not bake. Place on top of the onion and brush with sauce again.
  7. Next, lay out a layer of champignons fried with onions, and on top - the remaining potatoes. Lubricate with sauce.
  8. Cut the tomatoes into half rings, place the last layer and brush it with the rest of the sauce.
  9. Cover the pan with a layer of foil and place in the oven for 60-70 minutes at 180 degrees.
  10. 10 minutes before cooking, remove the foil and sprinkle with grated cheese.
