The candies turn out very tasty, tender, soft, similar to creamy toffee. Here I will describe the basic recipe for these milk sweets; it can be varied by adding nuts, dried fruits, carob or cocoa. You can also use boiled condensed milk instead of regular condensed milk; in this case, you will need a little less milk powder, since boiled condensed milk is thicker than regular milk.

Since childhood, my favorite sweet has been milk candies. But we simply called them caramels.

Despite the fact that the cooking recipe is always the same, the result may always differ from the previous one.

Depending on the temperature at which the caramel was poured into molds, you can vary not only the color, but also the taste. So, the real thing will have a slight transparency and the taste will not differ in any way from the store-bought one; and caramel that has been slightly overcooked will have a milky tint and become a little looser.

Milk candies prepared according to this recipe are very tasty. And I will tell you about two temperature cooking methods: everyone can choose the more convenient one for themselves.

Of course, for simplicity, it is advisable to use a kitchen immersion thermometer, but if you don’t have one, we rely on external signs.

Ingredients:

Milk – 2 tablespoons;

Granulated sugar – 7 tablespoons;

Vegetable oil – 1 teaspoon;

Dye - to taste and optional

Preparation:

1. Pour all the ingredients into a small saucepan at once, stir lightly and wait for the stove to heat up. At the very beginning, it is better to use a higher temperature, and then switch to medium heat.

It is advisable to use those dry dyes that are not used for coloring Easter eggs, since they contain salt. If kids will eat sweets, then you don’t have to add it or use it.

2. Wait until the milk starts to boil. Presumably, after this moment you already need to check the syrup: place a small drop on a saucer and try to roll a ball out of it - if it works, quickly pour the syrup into an oiled form. The optimal temperature for transparent caramel is 130 degrees.

If you want milk caramel, that is, opaque, boil the syrup longer, but without fantasizing, the mass may simply harden.

3. I used a Soviet mold, oiled it in advance and lowered a tall bamboo stick down the center. You can also use a plastic one, so the risk of getting a wooden splinter will be reduced. This is especially true for young children. The candies harden very quickly and are easily removed from the generously oiled mold.

Milk candies are a confectionery product made by heating sugar with liquid. The latter uses water, milk, lemon juice, sour cream, etc. And the main and constant ingredient is sugar. Use regular refined or cane. The consistency of the candy will depend on its quantity. That is, candies can be hard or soft. The less sugar, the softer the candies. It depends on the desired result. Therefore, you can vary the amount of sugar in the recipe.

2. When foam forms on the surface of the milk and rises rapidly, remove the container from the heat so that the milk does not escape. Then add sugar.


3. Turn the heat to medium and place the pan on the stove.


4. Stir and boil the milk, stirring constantly.


5. After the milk boils again, turn the temperature down to the minimum setting so that the foam settles.


6. Continue cooking the milk. It will constantly boil and change color.


7. After 15 minutes, add vanilla sugar and continue cooking for another 5 minutes, stirring regularly. The consistency of the mass will begin to thicken and acquire a golden hue. Boil the milk to the consistency you want. The darker and denser the mass, the harder the candies will be. Accordingly, and vice versa: with a lighter shade, the candies will be softer.
If you are preparing a large portion of sweets for a long time, then at the end of cooking, pour in 0.5 tsp. vinegar or lemon juice. This will prevent the caramel from crystallizing.
