Meat dishes of Montenegro

1. Negush prosciutto ( njeguski pršut)- the national dish of Montenegro, the visiting card of the country. This delicacy is raw smoked pork ham and is best made in the village of Negushi. Here, every family has its own family recipe for this delicacy. It is eaten as a snack and also used to prepare other dishes. It is usually taken away with them as a souvenir and for gifts. As a souvenir from Montenegro, in any supermarket you can buy a piece of vacuum-packed prosciutto for 10-20 euros (depending on weight). Ideally, prosciutto should be cut into very thin, transparent slices, you can ask the store to cut a piece on special equipment.

2. Chevapi (ćevapi)are sausages made from minced pork or beef with a lot of onions and spices, they are fried on the grill. French fries and vegetable salad are usually served as a side dish. Chevapchichi are very common in Montenegro, including as fast food.

3. Lamb from under the sach ( jagnjetina ispod sacca)is a masterpiece of Montenegrin cuisine. It is prepared as follows: lamb meat with vegetables is covered with a heavy cast-iron pot, and then red-hot coals are placed directly on top. The result is a tender, aromatic and healthy dish.

Meat is the basis of Montenegrin cuisine. He is loved here and knows how to cook. Exquisite meat dishes can be washed down with red wine "Vranac" (black horse) from local vineyards. And for savory sausages, Niksicko beer, which has been produced here for more than a hundred years, is suitable.

7. Kaymak - a special fermented milk product, somewhat similar to sour cream, only it is prepared from baked milk. It is spread on bread or eaten with a spoon. Very often it is used when stewing meat or fish, which then turn out to be very tender and juicy. In the restaurant menu, kaymak may be called Krem (Cream).

8. In the village of Negushi they make not only prosciutto, but also no less tastynegush cheese (Njeguski sir) . It is made from sheep or goat milk, each housewife has her own recipe. Someone has slightly smoked cheese, someone is aged in olive oil, sometimes with spices and even with berries!

9. Tulumba - a very common Montenegrin dessert with Turkish roots, you can find it here in any pastry shop and cafe. This sweet is similar to our custards, but instead of adding cream, it is soaked in honey syrup. Like all oriental delicacies, tulumba is very sweet, but also very tasty! This dessert can also be bought in a supermarket, but tulumba is already cured in sweet syrup, so it is better to try it in a cafe or restaurant.

Drinking Niksicko beer in the Bay of Kotor is a real pleasure! I advise you to order beer (draft) in restaurants and bars, it is better than bottled beer in quality. Very near there is the village of Kostanjica and on the shore - fish Ribar restaurant. Came here for the first time for oysters! Surprisingly, they were served with croutons and butter. Oysters are not cheap - as much as 4 euros, but large. It is nicer than the oyster farm in Orahovec for the same price or larger than the farm in Dražin Vrta. And service, dishes, the ability to order other dishes are also an advantage compared to wild plantations. Everything is super with fresh seafood and fish in this restaurant, I recommend it!

PERAST- I rarely stop here for lunch, the city is too touristy, I don’t like to eat in such places.

North of Montenegro

Lamb and veal from sacha is a national dish in Montenegro. Take only half the portion, otherwise you will burst! I eat strawberries all summer long, depending on the height of the mountains and the temperature, it ripens differently in Montenegro. On Mount Lovcen, Montenegrins don't harvest for sale, so we had a long strawberry lunch. The cuisine of Montenegro will certainly please those for whom food is a pleasure. It will doubly please those who like to eat a lot, because food is put on plates here without sparing, and the food is hearty. Many tourists take one serving for 2-3 people in restaurants and cafes. Montenegrins are meat lovers, and the farther into the mountains, the more meat and cheese. On the coast, guests will be served fish dishes, but this, unfortunately, is an expensive pleasure not only for tourists, but also for the Montenegrins themselves, because there is no commercial fishing here.

Those who prefer proper nutrition will not remain hungry either - after all this is a southern country where a large number of vegetables and fruits are grown. Of course, how is it in a mountainous country without natural cheese and sour-milk products with hot tortillas or bread fresh from the oven.

The beauty of this kitchen lies in its variety: many dishes of the former Yugoslavia are similar to the cuisine of neighboring countries (Turkey and Albania, Italy and Austria, Hungary). And since this is a mixture of west and east, the menu in hotel restaurants and street stalls will be very diverse.

Southern seasonings with absolutely organic local products gave amazingly delicious dishes.

There are few industrial enterprises in the country (and they are located far from tourist routes), plants try to grow without the use of chemicals. But meat is bought in Serbia, where animals grow in natural conditions. Result: it makes no sense for farmers to use genetically modified feeds for animals and plants, so the food is natural and very tasty.

In addition, Montenegrins are very hospitable people, who treat their guests with pleasure. Including local wine, which is customary to wash down any hot dish and cheeses.

Each community (region) has its own culinary secrets, so often the names of places are present in the names of dishes: tsrmnitsko varivo, trout in Podgoritsky, Negush steak. To try homemade national food, go to local taverns - konoba.

Another feature of Montenegrin cuisine, more related to work in the tourism business, is the preference for simple dishes with a small amount of fat and spices. Here they rarely fry in oil (as in oriental cuisine), much more stew, bake on charcoal or roast on an open fire.

Montenegrins have a dish - an aperitif meze - cutting from various meats, cheeses and olives. Nearby put a dish with slices of boiled eggs and pickles. And if the guests satisfied the first hunger, then it's time to serve the first.

Main national first courses

Liquid hot dishes are loved in Montenegro, as in all Slavic countries. There are two varieties of the first: soup and chorba. Soup is a clear broth with the addition of meat, which is seasoned with noodles, vegetables, rice. Seafood soup is even lighter than meat soup. Prepare it on the coast.

Chorba is a thick rich meat or fish stew. It is similar to Hungarian goulash in its thickness. If you come across the following names on the menu, then know what they mean:

  • chorba od povrcea- broth with vegetables;
  • chorba od kopriva- nettle soup in chicken broth or vegetarian;
  • Pilecha Chorba- the first on chicken meat;
  • goveja chorba- rich broth with beef and vegetables, but without potatoes;
  • riblya chorba- a fish first course, it is prepared from several types of fish, seasoned with flour for density and does not spare hot spices.

This ear is the most popular among tourists. The difference from our light dish is that it is a thick chorba with hot pepper, paprika and tomato sauce.

What is served for the second?

The second is traditionally understood as a hot dish. But Montenegro is also famous for snacks and salads. But cereals are not very popular. Nevertheless, for breakfast, they often offer tsitsvara, a puree made from cornmeal and young cheese. Tsitsvara is washed down with milk or curdled milk, or eaten with potatoes.

The second version of the traditional breakfast is popara: stale bread is soaked in milk with the addition of butter and young cheese. A hearty rustic dish is eaten with curdled milk.

A distinctive feature of Montenegrin salads is that all the ingredients are coarsely chopped, and everything is served in large quantities.

Of the appetizers, the main dish is prosciutto - the hallmark of Montenegro. This is an analogue of jamon, which can be bought at any store. It is the vacuum-packed prosciutto that is brought home by the guests of the country as a gift. In the Montenegrin village of Negushi, original recipes for smoking and curing ham (pork or much less often beef) have been preserved. It takes 4-24 months from the start of production to full readiness. The longer the prosciutto is aged, the more expensive it is. Dried meat is always used for meze, a separate snack or as an ingredient in other dishes.

But other meat dishes are no less popular:

  • taking from mlieku- lamb meat stewed in milk;

  • hanger- this is a chop in which cheese and prosciutto are wrapped;

  • mixed meso- this is an assortment of grilled meat dishes, which are usually offered in hotel restaurants;

  • flourkalitsa - pork, which was first fried over an open fire and then stewed with vegetables;

  • negush steak- beef steak with prosciutto and Kaymak cheese wrapped;

  • pašticada - stew in sauce, mixed with dumplings or pasta;

  • biscuit- fried meat on a spit;

  • splash- a flat cutlet with a diameter of 20 cm, which is made only from meat and onions, and it is fried without breading;

  • razhnichi - small beef or pork skewers;

  • sarma- very small cabbage rolls;

  • chevapchichi (chevapi)- grilled sausages from a finely chopped mixture of lamb and veal;

  • Montenegrin pork schnitzel- these are meat rolls with Kaymak, which were breaded with flour, egg, and then with breadcrumbs, and fried;

  • lamb from under the sacha - one of the signature dishes of Montenegro, which is cooked in sache (cast-iron cauldron) for 3-6 hours.

Fish and seafood are also very popular with tourists, although they are expensive dishes. But the closer to the south of the country, the more likely you are to taste oysters and shrimp, squid and mussels - prices are much lower here. You can cook your own meals from a freshly bought catch, or you can visit a fish restaurant or an outdoor tent. In any case, it will be insanely delicious, especially with the local white wine Krstach. The following delicacies are the most popular and famous:

  • Dalmatian goulash- several varieties of fish stewed with tomato sauce and spices;

  • Skadar carp- fish caught in Lake Skadar and baked in a pan with prunes sauce with the addition of apples or quince, as it cooks, the sauce turns into jelly;

  • mussels with fresh crispy bread– served with white or red Buzara sauce;

  • octopus, grilled;

  • pilaf with a variety of seafood;

  • Przheni ligni- squids, often fried in batter;

  • Ohrid-style fish- a dish of fish fillet, onions, grated potatoes and cream, which is cooked in pots, served with pickles;

  • black risotto with cuttlefish ink;

  • yaprake - baked carp, poured with a lot of cream.

Vegetables cooked in pieces or in a porridge-like form are served as a side dish: Dalmatian brew, kachamak, paprika liver, gyros.

It is worth noting that the cuisine of Montenegro is very similar to the food of other Balkan countries, and therefore the names of the dishes are very similar.

What dairy products should you try?

Sour-milk products and local cheeses are another yummy for which it is worth coming to Montenegro.

  • Kaymak - fermented baked milk, reminiscent of cottage cheese, sour cream and butter at the same time. Eat with a spoon or like cheese spread on bread. On the menu of restaurants, you need to look for this salted product called Cream. It is added to many dishes.
  • Negush cheese- Another visiting card of this place. It is prepared in the original recipe from sheep's milk, but is often mixed with goat's or cow's. Cheese can be young (reminiscent of less salty cheese) and hard, smoked or in olive oil, with pepper or prosciutto, with herbs or berries. Montenegro has a huge variety of dishes that are eaten at the end of the feast. Of course, now these delicacies can be tasted not only in restaurants, but also bought to try them on the go. Sweets include:

  • "Girl's Evening" roll stuffed with raisins, figs and walnuts;
  • crofne- donuts, inside of which there may be marmalade, chocolate, custard;
  • pachinke - huge pancakes wrapped in jam, sweet cream, hot chocolate, but the dish can be savory if the filling is cottage cheese, prosciutto, cheese, ham;
  • baklava- the famous oriental sweet with raisins and walnuts;
  • tulumba- very sweet pieces of dough by wetting them in syrup or honey.

Unsweetened, but no less tasty cookies include:

  • burek- puff pastry stuffed with cheese or meat;
  • gibanitsa- cottage cheese pie;
  • struukli- cheese (cottage cheese), nuts and plums are wrapped in dough, baked in the oven or boiled in salted water.

The drinks

For Montenegrins, tea is a medicine made from chamomile or mint, and coffee is a drink that can be drunk around the clock. Another popular drink is lemonade, but it is not mixed with sugar (it will be served separately). If you are lucky, ask the hostess to treat you to a drink made from wild pomegranate, which is not sold in stores.

Beer lovers can appreciate the local Niksicko, dark, light or with additives, which has recently been exported under the NIK brand.

And, of course, it would be strange if wine and liqueurs were not made in the country of berries and fruits:

  • from quince, apples, spruce young twigs, blueberries make amazing liqueurs;
  • "domachiy rum"- this is (for some reason) sweet homemade rum;

It is worth noting that if you don’t have to worry about the quality of the products, then it is not recommended to drink water from the tap in Montenegro.
