Kale Salad Recipe #1:

Grate carrots and the same amount of daikon on a coarse grater. Add to root vegetables to taste. Drizzle with fragrant sunflower oil. You can add cranberries.

Chop young cabbage, grate beets and sweet carrots on a coarse grater - all in equal proportions. Mix in a bowl and season: a tablespoon of vegetable oil, two tablespoons of orange juice and honey to taste.

Winter beet and pomegranate salad with caramelized nuts

This salad can be prepared, assembled in advance and stored in the refrigerator, and seasoned just before serving on the festive table.

  • Preheat oven to 200 degrees.
  • 6 medium-sized beets, washed, peeled, cut into slices or large cubes, tossed with 2 tablespoons of olive oil, a pinch of salt and pepper, spread on a baking sheet lined with baking paper in an even layer and bake for 30-35 minutes.
  • On another baking sheet, place one and a half cups of shelled walnuts, mix them with honey, a pinch of cayenne pepper and season with salt.
  • Bake at the same temperature for 15-25 minutes, stirring occasionally, until the nuts are golden brown. Remove from oven and let cool.
  • You can roast the beets and nuts at the same time if your oven allows, or you can roast them one at a time.
  • In a salad bowl, place a package of arugula or mixed lettuce, 1-2 pomegranate seeds (depending on size), 150 grams of gorgonzola (soft goat cheese or feta), chopped into medium pieces, cooked beets and nuts. Stir gently.

For refueling:

  • Mix a third cup of olive oil, a couple of tablespoons of balsamic vinegar, 2 teaspoons of orange zest and 2 tablespoons of orange juice, season with salt and pepper.
  • If available, add a tablespoon of fig jam. If not, then 2-3 sliced ​​dried figs or raisins. These are additional options, to taste.
  • Mix everything well and dress the salad.

Salad with broccoli and bacon

This unusual is prepared very simply and is great as a side dish for meat dishes or on the festive table for the Old New Year 2019.


Broccoli and Bacon Salad Recipe:

  • Using a small knife, separate the broccoli florets from the head, cut the large ones in half. Separate the rough part from the head itself, and chop the stem itself into equal parts.

  • Serve with grilled meat, pork or fish.

Warm salad with broccoli and cauliflower

  • Preheat the oven to 220 degrees.

  • Meanwhile, boil the mung beans in boiling water for 25-30 minutes. Peas should be ready, but not boiled. Drain the water.
  • Prepare your dressing. Squeeze 4 cloves of garlic into a bowl, add the juice and zest of half a lemon, season with salt and pepper, beat well, pour in 3 tablespoons of good quality olive oil.
  • Finely chop a bunch of greens: mint, parsley, chervil - to your taste.
  • Lightly toast 100 grams of walnuts or cashews in a hot pan.
  • In another pan, heat a couple of tablespoons of olive oil and fry slices of halloumi cheese (250 grams) until golden brown. Finally, drizzle with a tablespoon of runny honey and lightly caramelize.
  • In a salad bowl, mix broccoli, cauliflower, mung bean, add herbs, dressing, mix gently.
  • Sprinkle the salad with toasted nuts and top with halloumi.
  • Serve warm.
