Required:

Method 1. In a ladle in a water bath at an approximate temperature of 40 - 55 ° C. Do not allow too much heat, or the treat will start to burn. Never use aluminum cookware - the mixture will turn gray. Make sure that the boiling water does not reach the bottom of the container.

Method 2. Over an open fire. Place the chocolate pieces in a container with a thick bottom and keep the bowl over very low heat. constantly stirring the mixture to avoid graininess (even after removing the dishes from the stove). Features of melting chocolate:

  • Chocolate does not withstand high temperatures, and sweet milk varieties melt at a lower temperature. Chocolate with a higher cocoa content will require a higher heating temperature.
  • Do not add water to the hot product - it will make the mixture too watery. It is better to pour in warm full-fat milk, cream or softened (but not melted) butter one teaspoon at a time. All products must be warm, otherwise the mass will curdle and grains will form in it.
  • Dishes with a melting mass must not be covered with a lid, or the water that settles under the lid will begin to drip down.

2. Dip the berries into the slightly cooled and thickened chocolate sauce, placing them on wooden skewers. Then carefully place on parchment paper or a wire rack. To ensure that the chocolate flows evenly, it is better to place sticks with berries vertically in the holes of an inverted colander, in a glass, or sticking them into a piece of foam plastic.

Chocolate-covered strawberries with coconut flakes turn out especially tasty if the dessert is prepared not just with melted chocolate, but with chocolate-cream ganache. In this case, you get almost berry-like candies with a thick, tasty coating.

The most convenient and reliable method for preparing light ganache is to melt chocolate and cream in a water bath.

Main products:

  • strawberries (clean and dry) - 2 cups;
  • coconut flakes – 50 – 100 grams;
  • white, milk or dark chocolate (but not bitter) - 100 – 150 g.
  • cream 30% - 100 g (for dark chocolate), 200 - 250 g - for milk chocolate, 300 - 350 g for white;
  • sugar (preferably powdered sugar) - to taste.

Preparation:

  1. Place a pan of water on the fire. Choose the right size of dishware - the bowl or ladle with food should rest securely on the edges of the pan.
  2. Break the chocolate in a bowl and pour cold cream over it.
  3. After the water boils in the pan, reduce the heat and place a bowl of food on top.
  4. Constantly stir the chocolate and cream until you obtain a homogeneous, thick, shiny mass without lumps. If necessary, add sugar.
  5. After removing the bowl from the pan, cover it with cling film to prevent foam from forming on top (like on jelly) and cool slightly.
  6. Using wooden sticks or toothpicks, dip the berries into the ganache and then into the coconut flakes and place them vertically or at an angle for final hardening. Cool.

Tip: You can pierce the berry at the base with a skewer and completely dip it in the chocolate mixture, or just the tip. Sometimes the strawberry is carefully pierced from the top side, and only half of it is immersed in the ganache. Then the red strawberry will “peek out” from the chocolate base.

How to make in white chocolate

Strawberries in white chocolate are an equally tasty and healthy treat that looks very airy. Due to the absence of cocoa, it is best suited for children, especially if they ask for sweets before bed.

Ingredients:

  • strawberries – 200 – 250 g;
  • white chocolate – 100 – 150 g;
  • vanilla, orange zest (to taste).

Recipe:

  1. Peel, rinse and dry the berries.
  2. Dissolve the white chocolate pieces in a water bath over low heat. During the cooking process, you can add heavy (not cold) cream (25 - 33%) in the proportion: 1 part chocolate to 2 parts cream (in grams).
  3. Dip berry by berry into the warm chocolate mixture. If you want a subtle bitterness, sprinkle with orange zest and then leave to cool.

With mascarpone cheese

Mascarpone cheese will give strawberries with chocolate a special, melt-on-your-tongue “creaminess”.

To make chocolate covered strawberries with mascarpone, you will need:

  • strawberries – 300 – 400 g;
  • mascarpone cheese – 150 – 200 g;
  • dark chocolate – 2 bars;
  • heavy cream - 100 - 150 ml;
  • crumbly cookies (Yubileiny type) – 1 pack;
  • spices and powdered sugar to taste;
  • butter – 50 g.

How to prepare dessert:

  1. Melt the chocolate with spices and place on the table to cool under cling film.
  2. Crush the cookies or grind them into powder.
  3. Mix softened butter with cookie crumbs. For adults, you can add a few teaspoons of liqueur, rum or cognac to the mixture.
  4. Place the cookie mixture on the bottom of a wide glass or bowl without leveling it.
  5. Dip half the strawberries in warm chocolate and place on skewers to set.
  6. Beat the other half of the berries in a blender with mascarpone and cream, adding powdered sugar if necessary. You can mash the berries with a fork and mix with cheese and cream until you get a fairly thick (like rich sour cream) cream.
  7. Place mascarpone mixed with strawberries on the cookies in each bowl and top with chocolate-covered berries. Cool the dish in the refrigerator.

You can prepare a dessert with mascarpone by cutting out the middle of the berries and stuffing them with cheese whipped with the removed part of the strawberries. Then dip the stuffed berries in hot chocolate and then cool.

Step-by-step preparation with liqueur

Strawberries with chocolate and liqueur are a magical treat for adults that you simply cannot refuse.

Main products:

  • large berries (washed, peeled and dried) – 300 g;
  • cream liqueur, strawberry, chocolate – 50 – 100 ml;
  • white or dark chocolate – 100 – 150 g;
  • sugar (or powdered sugar), if using dark chocolate - to taste;
  • spices and herbs.

How to cook:

  1. Melt the chocolate over low heat, in a steam bath or in the microwave. Add powdered sugar, vanilla, cinnamon, red pepper (at the tip of a knife) to it if desired.
  2. Cool slightly until the mixture becomes warm and not scalding.
  3. Pour liqueur into the chocolate mixture one teaspoon at a time (no more than 2-3 tablespoons), making sure that the mixture does not become too liquid. Alcohol should not be cold.
  4. Fill a pharmaceutical syringe with liquor and carefully inject alcohol into each berry with a thin needle, piercing it.
  5. Dip the strawberries and liqueur into the melted chocolate using a wooden skewer and refrigerate until the chocolate layer thickens.

Bouquet of strawberries in chocolate

To make a luxurious, fragrant bouquet of chocolate-covered strawberries with your own hands, you will need:

  • large berries – 300 – 400 grams;
  • 100 grams each of dark and white chocolate;
  • optional: liqueur, ground nuts, orange zest, coconut flakes and

  • powdered sugar and food coloring - for decoration.

Making a bouquet:

  1. Those who master the art of carving, or simply want to add originality to their creation, can use a sharp knife to cut petals on a strawberry in the form of a rosebud.   • Colored glaze. For this type of fudge you will need white chocolate. Having melted the tile in a water bath, it should be divided into two parts. Add milk diluted with red food coloring into one half. The result will be a beautiful pink frosting. The prepared berry is dipped in colored or white fondant. The dessert can be topped with any confectionery topping. Then the strawberries are placed in the freezer for 10 minutes to harden the glaze.
  • Icing. This is a traditional type of fudge and is easy to make. Four tbsp. spoons of water are thoroughly mixed with a glass of powdered sugar. Viscosity is adjusted by adding water or sugar. Then the mixture is heated over fire with constant stirring. The glaze temperature should be approximately +40 degrees. Sugar fudge can be made colorful and more appetizing if you add dyes and flavors to the composition.


Important! A pastry pencil may be needed to design extravagant bouquets. Making is simple: you just need to roll up a funnel of parchment paper, pour glaze into it, cut off the tip and you can decorate the berries. The smaller the corner cut, the more beautiful and elegant the design on the strawberry.

  • 20–25 pieces of perfect strawberries;
  • 20–25 rosebuds, the size of strawberries;
  • wooden skewers;
  • plant branches;
  • gift paper;
  • decorative tape.




It is necessary to thoroughly wash and dry the large, dense berries along with the stalks. The rose buds should be the same size as the strawberries, and the flower stems should be the same length as the skewers.

The following steps are carried out step by step:

  • each berry should be carefully threaded to the middle on a skewer;
  • Next, place skewers with strawberries in a circle, forming a symmetrical bouquet;
  • rose buds are gradually introduced, and green branches are placed on top;

Chocolate and strawberry bouquet

To create the composition, you should select and wash a large, dense berry and dry it with a paper towel. Melt a chocolate bar in a water bath. To keep the berries more securely on the skewers, their tips need to be dipped in melted chocolate. Then carefully string the strawberries and place them in the freezer for a few minutes. After removing the berries on skewers from the refrigerator, you should carefully dip them in chocolate (white, black or colored).

You can decorate with any confectionery topping and put it back in the refrigerator. When the chocolate has hardened, you should form a beautiful bouquet by placing skewers on a base of plastic dough (kneaded with a lot of salt). Strengthen the structure with wire. The created bouquet is packed in craft paper and decorated with ribbon. You can add green twigs or flower buds to this composition.


Strawberry heart

This is the most original and delicious gift for your beloved halves. Such resourcefulness, sophistication and attention will not leave anyone indifferent. To create a strawberry heart you will need the following components:

  • large strawberries;
  • compact rose buds;
  • lettuce leaves;
  • floral sponge;
  • wooden skewers;
  • wire;
  • tapes.

The cooking process includes the following steps:

  • soak a heart-shaped sponge in water - such an oasis will fix the roses and extend their freshness;
  • the stems must be trimmed so that they can penetrate to the middle of the sponge;
  • cover half the heart tightly with roses;
  • then drape the sides of the composition with lettuce leaves and secure them with pins; secure all this with wire and decorate with ribbon;
  • Insert skewers into the oasis into the second half of the heart in even rows and thread strawberries onto each of them.



With sweets

To create a composition of candies, you need to prepare strong, large strawberries and round-shaped chocolates. Thread berries and candies onto skewers. There will be skewers with candies in the center of the composition; they should be secured with tape. Place and secure strawberries in the outer circle. Wrap the formed bouquet in film, decorate with mint leaves, and pack in gift paper.



With other fruits and berries

Strawberries go well with any fruit and berries. It easily combines with strawberries, garden blackberries, and cloudberries. The fruit and berry arrangement can be arranged in a basket or round box (sold in flower shops). Place polystyrene foam wrapped in film at the bottom of the container. Form a base on it - slices of any suitable fruit (rings of pineapples, apples, etc.).

The base must be pierced with skewers and toothpicks, creating a cone shape. To do this, large skewers are placed in the center of the composition, subsequent rows are “recessed” a little, then they move on to shorter toothpicks. You need to string strawberries onto the prepared fastenings. You can make a small composition in a mug, on the bottom of which put half an apple or orange as a base. How to cover strawberries with chocolate?

White, milk, colored and dark dark chocolate are used to cover the berries. Strawberries also look good in sugar fudge. The process of creating strawberry dessert is completely simple. You need to melt the chocolate bar until it becomes sticky. Place washed, dried strawberries on wooden skewers and completely dip into the prepared glaze. When the fudge has hardened, the berry can be dipped again into chocolate of a different color. You will get a beautiful two-layer dessert.


Using a cornet, a pattern is applied with white fondant onto the black frozen chocolate. The color can be changed to the opposite. Patterns made from colored glaze look good. Today I am posting a master class on creating candy strawberries and strawberry flowers. Such a bright and tasty bouquet will certainly please anyone with a sweet tooth.

For work we will need the following materials:

  • Corrugated paper in red, white, yellow (not pictured) and green.
  • Floral wire (I have #1).
  • Double sided tape.
  • Tape tape (in the absence of tape tape, you can use strips of green corrugated paper).
  • Threads.
  • Scissors.
  • Wire cutters (in my case, side cutters).
  • Candies (it is better to use candies of different sizes so that our “berries” look more realistic in the composition).

So, let's get to work.
From a roll of red corrugated paper, cut a strip 2-2.5 centimeters wide.

Then we cut this strip into 5 equal parts. But here I will make a small reservation. The fact is that candies have different sizes. This needs to be taken into account. If you have a large candy (“Autumn Waltz”, “Inspiration”, “Truffle”, etc.), then the strip needs to be cut into four parts so that we have a tail to which we will later attach the wire.

After we have cut the strip into pieces, we take the workpiece and fold it in half, thereby marking the middle of the workpiece.

This is what should happen.

Once we have made the required number of blanks for the berries, we proceed to the wire. I'll explain why I take the wire. When assembling a bouquet, our task is to create the most realistic look of the composition. You all know that in life a strawberry does not stick out with the berry up, but hangs down. Using wire, we can bend the leg in any position.
So, we divide the wire into three parts.

Then we make loops using wire cutters. We make loops so as not to pierce the candy.

We begin to attach the candy. At the same time, do not forget that we need to bend the upper tail of the candy wrapper, twisting it 2-3 times at the top at the base. We do not tear off the thread.

After our candy is securely fastened, we dress it in a “strawberry outfit” and secure it with thread. Our berry is almost ready, but we are not tearing off the thread yet, because... we need to put a sepal on the berry.

For sepals, we will need blanks of green corrugated paper 4 centimeters high and 3 centimeters wide. We make them exactly as many as we have berries.

And now we attach the sepal to the berry. We cut off the thread.

Taping the leg.

All that remains is to put the dots and that’s it, our berry is ready.

Let's move on to creating strawberry flowers.

To do this, we take yellow corrugated paper and cut blanks 3 centimeters high and 4 centimeters wide. I'm skipping this process. Next, to create one flower, we take two blanks and do the following. We cut off the upper left corner of the first piece, as in the photo on the left. We cut the second blank with “noodles”, not cutting to the bottom edge of approximately 1.5 centimeters. Then we move on to white corrugated paper from which we cut out blanks 4 centimeters high and 2 centimeters wide. From the resulting blanks we cut out the petals of the future flower. We need 5 petals for one flower.
